Pumpkin Pie Salad

Last week I was looking around online for a new recipe for a salad to take to a dinner.  I have three salads that I usually make (depending on what I feel like), but I wanted to try something new.  Since it is getting to be fall, I wondered if anyone had ever made a pumpkin salad before.  So, I set out to find a delicious recipe online.  I found a few, but they didn't sound very good, so I decided to make one up.  And boy, am I glad I did...it turned out delicious!  And it is extremely easy to make!


Here is what you will need (but make sure to read the recipe, because you will need two of some of the ingredients)



Pumpkin Pie Salad

29 oz. Canned Pumpkin
2 tsp. Cinnamon
1 tsp. Ginger
2 containers (8 oz. each) Whipped Topping
2 (3.4 oz. each) Instant Vanilla Pudding
Shortbread Fudge Stripe Cookies, crushed

Mix pumpkin, cinnamon, ginger and pudding mixes together until well combined.  Stir in whipped topping.  Add cookies.  

*I used 3 rows of the cookies, but you can add more!  It will still be yummy after a week!  This makes a pretty big salad, so if you want a smaller one, just use a small can of pumpkin, and half the other ingredients!

*I may try it with cheesecake pudding sometime - I bet that would be delicious!

I can't get enough of this stuff!  It is so good.  It was quite a hit at the dinner too!
